Omakase roughly translates to “I’ll leave it up to you”, but it’s every bit the dining experience – immersive, elevated and unrushed.
Ibuki Sushi’s chef Yohei Hombo personally guides diners through his 15 prepared-on-the-spot courses – with the menu featuring the freshest ocean catch from Australia, New Zealand and Japan, and each exquisite morsel’s flavours building on the ones before.
This meticulous preparation means there can only be 8 guests for each night’s omakase.
