In the early 2000s, San Francisco-based scientist Camper English was looking for his next project.

Having seen the cocktail revolution taking hold, he decided to turn his attention to the drinks industry – first by writing bar reviews, and then by developing the popular ‘directional freezing’ technique for making clear ice.
