Recipe: Lemon lime salmon with chargrilled corn & fresh tomato salsa

Preparing delicious, healthy food doesn’t have to be stressful or time-consuming. This fresh, colourful dish will have everyone smiling.

Lemon lime salmon with chargrilled corn & fresh tomato salsa
Serves 2
Cook time: 20 minutes 

2 salmon fillets
½ lemon, juiced
½ lime, juiced
1 fresh garlic, grated
salt and pepper

1 corn cob, grilled
6 cherry tomatoes, quartered
½ red onion, diced
1 avocado, diced
1 small cucumber, diced
½ small red capsicum, diced
small pinch of fresh coriander, chopped
salt to taste
lemon to taste 

In a medium bowl, add salmon fillets, lemon juice, lime juice, garlic, salt and pepper. Leave to marinate for 15 minutes. 

In a small pan, heat a small splash of olive oil over a medium heat. Grill corn cob on all sides for around 8 minutes or until cooked all over. Slice the corn off the cob and season with a small pinch of salt. 

In a medium bowl, add cherry tomatoes, red onion, avocado, cucumber, capsicum, coriander and season with a pinch of salt and lemon to taste. In a small pan, heat a small splash of olive oil over a medium heat. Add salmon, skin side down, and cook for 5 minutes. Flip and cook for a further 5 minutes or until cooked to your liking. Top salmon with salsa and serve.
